It don't get much better than Phantom Hourglass when it comes to using ALL of the DS's features, including touch-screen.I love to use the DS Touchscreen for playing games, but i don't know many games which makes good use of touchscreen.

Elite Beat Agents if you like rythem games (plus the japanese version ouendan) StarFox Command Nintendogs Yoshi Touch and Go (not a good game)
Functionally, I'd say that Chinatown Wars probably makes the best use of the touch screen.
Best use of two screens (not necessarily by using touch-functionality) goes to Henry Hatsworth, without a doubt

I second that.
The World Ends With You and Ninja Gaiden: Dragon Sword.
They both fully utilize both the touch screen and mic.
Heymost first-person shooter use the touch screen to main but if you are looking for an adventure game then there are also many of those.
Zelda: Phantom Hourglass
Star Fox Command
Metroid Prime Hunters
Moon
C.O.R.E.
Call of Duty 4: Modern Warfare
Call of Duty: World at War
My choice is Phantom Hourglass
Phantom Hourglass is probably one of the best.
Other good games (mostly virtual or strategy types) include:
Harvest Moon: Island of Happiness
Puzzle Quest
Magician's Quest
Animal Crossing
A really good 'box of games" - lots of different types - card games, dice games, etc. is Touchmaster.
