- Goldeneye 007. You said you're an FPS fans, so I see no better way to start the list out than with Goldeneye 007: arguably the best FPS per se on the console, with the added bonus of you being able to play with the pointer instead of the dual-analogs.
- Xenoblade: Chronicles. You said you liked RPGs, this is one of the best yet. It's not flawless, but its scope, soundtrack, replay value and gameplay quality are just too high for you to ignore.
- Metroid Prime Trilogy. FPA (First Person Adventure) games where you use guns. It'd be an FPS, if FPSs had cool puzzles, stories, world and as varied gameplay as the Metroid Prime franchise. If you like games, there's no excuse not to play this.
- Super Paper Mario. While I'm partial to the first game (Paper Mario - you can download it on the Virtual Console, if you wish to play it), this RPG is just as good, even if less innovative, than its predecessor.
- Resident Evil 4. This game is widely considered the best in the franchise, and a great game by itself. The fact that you can use the pointer instead of the sufferable dual-analogs just adds to its value.
- The Legend of Zelda: Skyward Sword. While I agree that the TLoZ games are closer to an 'adventure' genre than role-playing per se, Skyward Sword has so much in production values (graphics, soundtrack, length) and so much in gameplay (1:1 sword control, pointer aiming, several puzzles and gadgets to complete them with), that if you own a Wii, you should own Skyward Sword.
- Okami. When I first played Okami, my thoughts were: 'this is Zelda done better than Zelda'. Fantastic game. Again, it's closer to an adventure genre, but if you enjoy RPGs you might like it as well.
- Sin & Punishment: Star Successor. An on-rails shooter done right. Forget about those slow-paced arcade games you played when you were younger, Sin & Punishment will have you dodging attacks across the screen and bombarding your enemies with bullets and melee attacks.
These are the ones I can think of -- and The Last Story, which I haven't finished, but has a high rating. There are several other ones in the VC and Wiiware department, of which I'd like to mention Final Fantasy VI (named Final Fantasy III on the VC because of how it was called when it was released in the US, on the SNES), Final Fantasy IV (II) and Chrono Trigger -- three games that are hailed as achievements for jRPGs and games as a whole. If I were you, I'd explore the other genres, but these alone should keep you busy for a decent amount of time.
