These are the main differences (well, the ones I know of)
Lack of fighting styles (The PS3 and 360 version have a new feature where each wrestler will have 2 fighting styles each enabling them to do moves that no other wrestler can do)
More "Arcade" style play (Faster gameplay with less focus on simulation. There is no run button. Also there isn't a button to let you climb the ropes or in and out of the ring. These will be done by standing next to the ropes or corners.
Graphics similar to the PS2 version (The game looks ok but lacks a lot of the polish and extra details that the PS3/360 versions have)
Less CAW features (The PS3/360 versions will feature new 3d clothing, accessories)
Lack of 24/7 mode (This is a new mode where players can take their CAWs or in game wrestlers through a proper career mode and eventually get in to the Hall of Fame. Like the usual career mode but more in depth)
These are the main differences I know about. The only thing that bugs me is the actual matches will toned down a bit (like the lack of a run button). Hopefully, the controls will be intuitive and fun to use and will make up it.
I haven't really heard anything about online except for certain comments about the WiiConnect24 being a good feature and they're thinking of different ways they could include it.
All in all this should be a decent game but the controls will need to be pretty much perfect otherwise this will completely fail.
