Personally I want Persona 3-5 and a Dark Souls remaster for the switch.
Add in Pillars of Eternity because, why not?

If you are talking third party, I have a lot I'd like to see. Most notably Kingdom Hearts. There are lots of third party games that I would just rather play on my PC than the Switch. I'd also love to see a new Monster Hunter come to Switch but I think that is just a matter of time. Kingdom Hearts is more of a gamble ;)
If we are talking unannounced first party, I'd love to see a new Donkey Kong and obviously Animal Crossing. Everything else has been announced already, except Smash. I really don't know what to expect from Smash so I'm not going to get hyped until it is announced.
I would also love to see Persona on the Switch, great choice! Not sure if FromSoftware will port a Dark Souls remake though, if they even do one in the Switch's life cycle.
Fire Emblem Radiant Collection- Fire Emblem is one of their hottest 2nd party series, why not make a collection of some underplayed but very good games from that series with an HD treatment.
Ni No Kuni 2- while I will probably get it on the PC anyway, it seems a game made for Nintendo portable consoles, and considering the 3DS had the original it seems like it's possible the Switch gets this one.
A 2D LoZ game- this is mostly just me hoping Nintendo doesn't totally forget their past... ALBW was a really amazing game that I love almost as much as BotW for somewhat different reasons, so yea...
Pokemon Online/Pokemon Rainbow/Pokemon Kanto- Not sure I care which, but seriously either of these 3 games would be an amazing addition to the Pokemon lineup
A western release for Dragon Quest Builders 2
A sports game like MLB Power Pros (which I think is still being made in Japan anyway)
Dark Souls! Like.. now!
From Software was listed as a supporting dev for the Switch before release. I'm still waiting on what From was gonna do, but it now seems they're doing nothing, judging by their silence.
F-Zero. Seriously. F-Zero GX is one of the best games ever made. Wii didn't get F-Zero, Wii-U didn't get F-Zero. And here we have Nintendo ignoring it yet again.
Animal Crossing. Like.. why isn't there one already?
Monster Hunter - Not as much now as I can and will play World on PC, but some kind of MH should be on Switch.
Persona series would be cool.
Metroid: Samus Returns (so I don't have to play it on 3DS)
I'd want King Arthur's Gold (a pc game, although not a very well known one i guess) and an Anno 1701 like game (propably one of my favourites), and well propably more games than i could think of rn
Edit: oh a pokemon mmo would be so cool btw <3
well there are the usual suspects. metroid prime 4, monster hunter, pokemon (i havent played a pokemon in ages. i cant wait for it on the switch), a new mario kart (i have 8 on the wii u so im not going to get it again), fzero, zelda and so on.
i would also love to see a new kid icarus. the 3DS game was great and i would love to see a new one on the switch.
besides that: surprises. whether its using existing IP in unexpected ways (mario xcom) or new games like octopath....more of that.
As many JRPGs and WiiU ports as possible. Including the fantastic Tokyo Mirrage Session: I would love to get a Switch port that's uncensored, maybe with an additional optional dungeon or a new playable character.
New games I'd like to see would be Endless Ocean 3, Animal Crossing and Harvest Moon.
I'd also like Hyrule Warriors Deluxe which would combine Hyrule Warriors with Hyrule Warriors Legends and include all of the DLC (Characters, Weapons, Maps etc) in one package, plus add a few more of each. It'd be an actual Deluxe title that'd make sense and not feel like a rip off.
Classic franchises (which we already have confirmation of from a lot of them), some ports of newer games so I can play them (my laptop cannot handle current AAA games like Dark Souls 3 or DOOM), and some original IPs that I didn't know I wanted.
Animal Crossing! It's time for a new Animal Crossing. The Switch needs this. Right now it isn't an exciting system.
Haven't bought a switch. Still playing my Wii U.
Same. The Switch isn't exciting at the moment. Its best titles I can play on the Wii U.
That will change with Odyssey... But still, it's only one game. The Switch is really falling short on new titles that will excite me, personally.
Wolfenstein II: The New Colossus is coming to the Switch, so I hope to see Bethesda releasing Wolfenstein The New Order too. A solid and lengthy single-player campaign.
Super Mario Maker
Eternal Darkness (sequel, not remake)
Luigi's Mansion (sequel, bigger and longer)
New Rogue Squadron title
Dark Souls
Classic Final Fantasy ports (4-6)
In no particular order.
I already have Overwatch on my PS4, but it'd be a dream if it came on the Switch and I can just use my work/school wifi to play online.
Third Party: I can't stress how much I want Overwatch on the switch. Dark Souls would be nice, too, and maybe P5 because SMT V is a Switch exclusive.
First Party: Pretty much everyone's list. Pokemon, Smash, Animal Crossing, new F-Zero, new Mario Party, core Fire Emblem game, new Luigi's Mansion and a 2d Zelda. Virtual Console (including Gamecube) would be a godsend for me. A cool idea would maybe be Zelda Maker, where you make your own Zelda dungeons on the style of 4 Zelda classics.
No particular order of preference:
Bionic Commando (remake of original NES version or a new entry)
Megaman collection, or a new entry
Bioshock ultimate collection
The Witcher 3
Dark Souls (all of)
GTA V
Street Fighter IV
Sega Rally
A decent golf game, preferably not by EA, although most of the Tiger Woods series were good
Earthworm Jim
Just to name a few!
Friday the 13th
Bloodstained: Ritual of the Night
South Park FBW
Resident evil 8
Mario Maker
Tokyo Mirage Sessions FE
Persona 5
GTA V
Fallout 4
I'd like to see...
Redout
StarFox Assault Definitive Edition HD
A Hat in Time
Helldivers Complete Edition
Smash Bros 4 Ultimate Edition
F-Zero GX Ultimate Edition HD
Wind Waker Definiative Edition HD
Star Wars Rogue Squadron III HD
Time Splitters: Future Perfect HD
Kingdoms of Amalur: Reckoning
Apart from the usual first parties(Smash Bros, F-Zero, Star Fox etc) give me Metroid:Samus Returns HD and Okami HD and i'll be a happy camper.
And some original IPs ofc.
If we're talking about Nintendo made/co-made games then I'll take: Hyrule Warriors, Kirby, Super Smash Bros., Bayonetta, more Zelda, a true Mario Kart sequel, Mario Party, Pokemon, Animal Crossing, Wii Fit, and a console style savvy trendsetter.
If we're talking about non-Nintendo games then I'll take: Call of Duty (only if it has zombies mode though), Final Fantasy, Kingdom Hearts, Soul Calibur, Witcher, Sonic (Nintendo just needs to buy Sega to be honest), and Dynasty Warriors.
In no particular order.
No RE4!?
I also want Dark Souls, Fatal Frame, Super Mario 3D World, Divinity OS1+2, Metal Gear series, Borderlands, Crysis 1-3.
Some sort of combat flight sim, a cleaned up version of Witcher 1, and Kingdom Under Fire.
And because I never played them: Wind Waker, Twilight Princess, Kingdoms of Amalur, and Valkyrie Chronicles.
I have some Sony exclusives in mind... but that's just wishful thinking.
If they brought Smash Bros. 4 to Switch, I'd be all in on finally buying one. Other titles that would give me serious consideration would be:
F-Zero
Star Wars Rouge Squadron
A port of FE: Path of Radiance and Radiant Dawn
Golden Sun
New Mario Golf
A reattempt at Geist
Battalion Wars
A Jet Force Gemini-esque type game
Yoshi Story sequel
Lost Kingdom sequel or remake
Mass Effect Trilogy with all downloadable content for each title.
Monster Hunter
I would like Nintendo to make some old games available again. I'd like to be able to carry A link to the past / Links awakening / Oracles with me when I go out.
I would also like Indies like 20XX, Spelunky 1/2 to be ported at some point as well.
Aside from these, Nintendo can keep doing it's thing. That are doing fine right now :D.
