We all love Mario Kart. If you had to choose, which one would you say is the best? I would have to go with Double Dash or 64, but I also like Mario Kart 8 and Mario Kart Wii.]

Definitely MK8. Although its roster and battle mode were disappointing, the DLC made up for it. The next installment has big shoes to fill.
MK8 is brilliant, with the exception of the battle mode. I was really hoping they would add some of the classic battle maps from previous games in with dlc, but they didn't. My most played is easily 64, so I'll say that.
I have a theory that I can predict most people's favorite Mario Kart game by the importance that they place on battle mode.
I'm sure there are a few exceptions to this, but I believe it holds true for most people based on what I've seen from past discussions about this topic. For me, I really love battle mode, so Mario Kart 64 is my favorite since it has by far the best battle mode.
Eventhough I had long playtime for Mario Kart DS, my best title is Mario Kart 8 with the exception of Battle Mode.
MK8 gets the standard MK formula down perfectly. Though the physics are a little heavy. Regardless, it's probably the best. But Double Dash is probably the most different out of all the games, and is really awesome because of it.
I never cared about Battle Mode, so it has no bearing on my choices.
For me, I think it's gotta be Double Dash. That game just remains so creative with the two-racers-per-kart feature, and the courses are some of my favorites in the series. The battle mode was also incredibly fun to play.
A close second would be Mario Kart DS, which I think still remains one of the greatest handheld multiplayer games ever. And at the time of its release, it simply blew me away with the amount of content it had.

5. Super Mario Kart
6. Mario Kart 64
7. Mario Kart Wii
8. Mario Kart Super Circuit
7 for the great courses and the addition of underwater and gliding sections. I really liked 8 too for the most part, even though the roster is iffy and the courses can sometimes feel too wide, making them less chaotic.
Battle Mode:
1. Mario Kart DS - simply for the variety of modes, the coin runner variation, etc.
2. Mario Kart 64 - because it's awesome.
3. Double Dash - had some awesome levels.
4. Mario Kart 7 - continues Mario Kart DS style battle mode.
Racing
1. Mario Kart 8 - by far.
2. Mario Kart DS/7
3. Mario Kart 64 - nostalgia, very big levels with exploratory sections ie, going to the Mario 64 castle even though it served no purpose.
Mario Kart Double Dash, it has a great character selection, the best items, my favorite battle modes and multiplayer, and I've played it the most. Mario Kart DS is very close to Double Dash and it has the best single player out of the series.
Mario Kart DS set the precedent for the games after it. Super Circuit introduced the whole retro stages thing, but the DS version made Mario Kart a decent franchise. MK8 may be better technically, but MKDS was the best one. I see SSBMelee in the same way in the Smash series; sure SM4SH is super meaty with content, but Melee set the franchise on the successful path it is on right now.
My personal favorite would have to be Double Dash, if only because it actually let me play a Mario Kart game with a good friend of mine without getting infuriated at him since he's so much better than me. DS is a close second though, mostly because it felt really well balanced and introduced some amazing maps to the series (I LOVE that sky ship fortress level).
