....I plan to buy a 32 inch Aquos later on but it only has ONE component input, which I need for my 360 in order to play in 1080p. Now I heard that Wii cannot do even 720p, so I'm wondering if its wise to go for an s-video cable instead. If I get component Wii and component 360 then I'll end up having to plug and unplug every time. Worse yet, I'll also need the 1 component input to plug in my new PSP as well.

Does anybody here use S-Video cables with their Wii? If so, is there a significant difference?

I personally would go with the component inputs, but if you have to choose between you're Xbox and your Wii, choose the 360 first, 720p/1080i is too important to pass up.
The other choice, is to find another type of television that offers more than two component inputs... it really doesn't make sense why that tv only has one.  I bought an LG a while ago and it came with two components and two AVs.  Graphics look spectacular in both.

Really?  I never got that.  Perhaps it's your tv?  Or perhaps it's mine...  Or I'm not looking closely enough to notice.

True, but this is the only 32' set which offers 1080p that I know of. The Sharp Aquos has gotten high praise, and I really don't need anything bigger for my desktop (this thing will also be my computer monitor).

Buy a component video switch. Those things aren't expensive. Walmart sells them for $30. What they do is turn your one component video port into 4 ports.

Heres one for $30 at amazon.com

Yeah a component switch would be the best idea. But S-Video should look good too. My parents have there Wii hooked up with S-Video on their 32'' HDTV and it looks pretty good.
