I think the Clone Wars may have more realistic light saber controls.
The Force Unleashed controls are more like a beat em-up. You can string together combos with the WiiMote (by swinging up, down, left and right) and use your force powers with the Nunchuck.
Well since none of them uses Motion+, it seems like both of them will have about the same light saber controls to me. If Clone Wars uses Motion+ (and uses it GOOD) then it'll have better controls though.
I think the Clone Wars may have more realistic light saber controls.

how can it have more "realistic" controls, both games just have up down, left right, and stab, its exactly the same lightsaber controls and they will both work just as good as each other

I used the word "may" because I wasn't sure about the Clone Wars.
