Try messing with the sensitivity in your console settings. You might not have the sensor bar's sensitivity up high enough.

Also, if your console directly faces a window where sunlight comes in, you could be getting some lag from the stray IR rays from the sun.

Essentially, the sensor bar is just looking for 2 points of IR light that come from the Wiimote, and if it's not seeing those properly you're going to have some problems. I would guess there's nothing wrong with the sensor bar, though.

I had this problem as well, sometimes when there is refelction for your Wiimote or sensor bar it tends to mess around with the connectivity. I do not think there is anything wrong with the Wiimote or Sensorbar, simply the position or some reflection or something else that is interupting the connection.

Surprised nobody asked this yet, do you have an HDTV? If you have an HDTV and are using the composite cable (the yellow cable that came with the Wii (white and red are for audio, not video)) that could be your problem also. It is highly recommended if you have an HDTV to get the component cables (do not pay more than 30 bucks because that is the cost for the Nintendo ones) and set the Wii to progressive scan. That should help alleviate lag if you are using an HDTV.
