On PC, there are plenty. I recommend Jane's F/A-18 and Falcon 4: Allied Force in particular if you're looking for realism. Flanker and Lock-On provide some Russian jets with decent flight models (though the avionics aren't handled quite as well in Lock On). Also, Google "Fighter Ops," and join the group of flight sim fanatics eagerly awaiting its arrival.
