I don't know. It depends.

Lately I've been enjoying Cat Power's rendition of " I Found A Reason" and Charlotte Martin's excruciatingly superior version of "Wild Horses".

Oh, and TV on the Radio's version of "Mr Grieves'"

Grateful Dead - Death Have No Mercy (from Live/Dead album)
Jimi Hendrix - All Along The Watchtower
Toots And The Maytals - Country Roads

That's what immediately comes to mind...

I say this every time, but the best one is Goodnight Nurse's cover of "Milkshake" (link to it).

Hey Joe by Hendrix. I heard some other covers of that song and didn't find them to be as good.

All Along The Watchtower by Hendrix and Respect by Aretha Franklin are the two I think of off the top of my head where the cover version was superior to the original

"Imagine" by John Lennon covered by A Perfect Circle.

Or "Another Brick in the Wall" covered by Korn.

By far the BEST is the cover of "Hurt" by Johnny Cash.

None immediately spring to mind.....

Biffy Clyro's version of Buddy Holly was a decent stab.
