Shrek has really good songs in them and it fits perfectly, either in the movie or just listening to them.
The Jason Bourne series have really good high intensity songs, that seems only practical during my weekend jogs.

The Blade Runner soundtrack by Vangelis is ace...I love classic synth orchestration.
Also, Apocalypse Now is an amazing soundtrack.
Wes Anderson's movies always have great music too: Life Aquatic, Rushmore, Royal Tenenbaums.

Hans Zimmer has made one great soundtrack, and that's The Thin Red Line.
