I've opted to go the electric guitar route, but according to most here, I should practice on an acoustic?  Can someone recommend a good one?

Acoustic will be cheaper to get into but it all depends on your musical interests. I own a Fender Stratocaster Delux Power model and an Ibanez Artwood Series acoustic. I love both of them. An acoustic is like i said, cheaper but an electric will be easier to play for a beginner. You can go get a cheap squier and a little 10 watt marshal for less than 200 bucks but squier doesnt make the best guitars. Schector is a new brand and they sound really good in my opinion. What i reccomend is going to a store like guitar center and playing the different guitars there. If you cant play anything, ask one of the employees to play something for you so you can hear what you will sound like after you take lessons or teach yourself. Well All I can say is that it doesn’t matter if you have got the most expensive acoustic in the world as long as the wood is quite mature and it sounds hollow then its a great guitar. It’s about what you think it sounds like.8) yep

Don't waste your money on a Martin or Taylor if you are starting out. Go with a Yamaha, they are affordable and have good sound quality. Let me tell ya this, I've been playing guitar for years and out of my 4 guitars the guitar I play the most is my nylon string yamaha CG-110A that I got for free and had to restring it to fit my left handedness. It's cheap, has been knocked around, has stains on the fretboard, but I love it.

Fender all the way. If youre just starting then get like a Fender thats like 300-400$ if you want to spend that much. They are really good.

Don't waste your money on a Martin or Taylor if you are starting out. Go with a Yamaha, they are affordable and have good sound quality. Let me tell ya this, I've been playing guitar for years and out of my 4 guitars the guitar I play the most is my nylon string yamaha CG-110A that I got for free and had to restring it to fit my left handedness. If you are just starting out, Yamaha's are pretty good. It really doesnt all that much, as long as it sounds ok and plays right, by the time you notice anything wrong with it you will probably have gotten good enough to be wanting a better one anyway.

Yeah, the neck is a little smaller, and its easier to hit the strings down, but start on acoustic, its cheaper and yeah...in my opinion its better.

    Electric is easier, but I believe starting with an acoustic is better. It will build stronger hands and hopefully better form too. Acoustic necks are generally thicker as well as the body of the guitar. The strings are also a bit thicker as well. Going from acoustic into electric will be quite a bit easier than the other way around. You won't be shredding too hard on an acoustic (unless you're al dimeola) but you can pick up and play any time without an amplifier, you can take it over a friends house to jam without lugging around cables or an amp, plus it's way more comfortable and easier in my case at least to fingerpick on an acoustic. 
 
    I play lots of rhythm guitar, mainly dealing with Bossa Nova and jazz standards and for me I get better sound out of an acoustic, but ya know it's all about what you want to play.

It just depends what you want to play.  In my opinion it isn't much easier to start on an acoustic.  I started on electric and I like it a lot better than acoustic.  First of all I play rock so I like putting on distortions and other effects and I also don't like the big bodys of acoustic guitars.  I can play them just fine, but compared to my gibson LP it is a little bit awkward to be sitting down and playing because of the body sizes.  To start you can get either an acoustic or electric starters pack for about $200 its just up to you.  I also recommend playing the guitar in a local guitar shop if they have it before you buy, you never know, you may not like it.
