what is the best part of the pig, anything from tail to snout is fair game. some parts of note are: ribs, shank, shoulder, tender loin, belly (bacon), chops, country ribs

Personally I'd go for shoulder.

The crackling is so nice.

Though I haven't tried snouts, or any of the more obscure parts (obscure based on South East England tastes).

Yeah, I'm a fan of pig knee too, but there's nothing that compares to my love for ribs. Not only are they my favorite type of meat, they're cheap (you pay US$8,00/kg of very high-quality pig ribs, here)

i get my ribs for about 2.20 /lb thats around 4.80 per kg :P baby back for around 3.20 /lb :P

... where do you live? I don't see you getting that in the U.S, certainly not in Brazil. But I can't really complaint, US$7,00 - 8,00 is already low as it is.

Yea meat is usually cheap in the US. $8.00/kg for rib is a little expensive. It's not uncommon to see around $3 /lb, especially in KS, also about the same in MN at least if you buy from the market and cook it yourself. Restaurants still rip you off though.

Ribs. That was pretty quick.

Look, I'm not saying the rest of the pig tastes bad, it's all great. But to me, no taste compares to the taste of pork ribs... and this comes from a man who's eaten almost every part of a pig (haven't eaten tail, yet), and different types of meat going from crocodile and rabbits to cows and hogs.
