Vegetarians do not eat any animal flesh and vegans eat nothing that has come from animals in any form.
Psuedo-vegetarians make me laugh because they're obviously confused about the term. There are lots of people who claim to be vegetarians "But I eat fish." Yeah, no, you aren't a vegetarian.

I am a vegetarian. Vegeratians don't eat flesh, fish or fowl. My interpretation of vegetarianism extends that to gelatine, non-vegetarian dairy (most cheeses, etc) and battery chicken eggs - as well as just about anything else involving tangible harm to animals. Wearing animal products also violates my personal vegetarian ethics.
As for needs, no. We don't need meat. All the nutrients found in meat are found elsewhere. I've been a vegetarian for thirteen years now and I'm pretty much the fittest and healthiest person I know.
People will joke about vegetarianism because it's fun to make fun, but vegetarianism is much better for you (meat is generally unhealthy and the protein carcinogens are crazy high), and the constant advances being made in vegetarian foods (at least here in UK, I couldn't find much while I was in USA (and I was in the hippie-state, too!)) means the sacrifices made are actually pretty small.
