In my opinion, bacon is alright once in a while but it is definitely not this super amazing food that so many people make it out to be. I'd much rather have a thicker, juicy piece of meat, thank you very much. Not to mention most bacon is salty as hell (even the versions with "less salt added"). However, it can taste good when added to other things. I just think bacon has been elevated to such a high status because of EpicMealTime and people have just jumped on the bandwagon. In my opinion, bacon is overrated. What are your thoughts?

It's pretty great, but I was never on board with the bacon "craze." It seems like it's less about the flavor and more about its status.

I would take beef or chicken over bacon as a regular meat, but bacon is really nice at times.

Or don't cook it enough. Bacon is supposed to be crispy.Pirate700
Cooking bacon properly is a labour of love. In order to get it to that "perfect doneness" one must tread a precarious edge that could at any minute give way to black nothingness. In a pan (I have never tried baking large amounts in the oven) over medium heat, with constant supervision and consistent flipping is the only way to get it right. Also, it tends to firm up more once it's starts to cool, so one need not bring it to a perfect crisp in the pan. There is a point during cooking when it heats up to the point where the flesh begins to brown, and it is this color, on the entire surface of the meat, that is the desired outcome. And another thing I often didn't get early on when I started, is that each piece cooks at a different time, depending on thickness, length, fat content and position in the pan... so one must remove each piece when it is done and not wait for the others. -- If it wasn't obvious already, I'm sure it's pretty plain to see that I've cooked so much bacon it's not even funny. When done right, it is glorioisus. I often cook more than I need, because I'm always eating some when it's finished.

In all honesty, as someone who eats it regularly, I've started to prefer bacon cooked in the microwave. It comes out perfect every time once you know the right time. Just gotta make sure to have one of those bacon microwave trays.

1. Pork is my favorite meat; lean, in many cases, and can be prepared countless ways.

2. Bacon is awesome. While not my favorite cut/preparation of pork, it is close to it. But there are so many bad brands out there. I recommend Niman Ranch Applewood Smoked bacon; thick cut, not salty, with subtle sweetness and a nice clean finish. Also just go to the store and go to the butcher counter and ask for custom-cut bacon that is X" thick

That is all.

Also, grilled bacon. Seriously, grill it over coals. Its amazing. Just watch out, it can flare up.

If you have the time, or are cooking for a group of people, do it in the oven. Comes out perfect, and uniform. Just line a pan with edges (it only nees to be 1/4" deep) with foil, then put the bacon in; you can crowd it, maximize space, just dont layer it. Put it in thecold oven, then turn it on to 400 degrees. Give it 15-20 minutes, then start checking it every 5 minutes or so until its to your liking.

The trick is the cold oven; it doesnt shock the bacon, so it prevents it from curling.

If it's cooked correctly to the point where it's crispy and not all chewy and stringy then it is amazing.
