Feta's awesome. Has a nice bite. I love jalapeno jack and cheddar. I also enjoy a good havartti.

mozzarella, specifically FRESH mozzarella.

Feta is good too, though.

Swiss, pepperjack, and mild cheddar are good as well.

I think Brie is my second favorite though. A nice bleu or gorgonzola is good too, especially on a salad with grapes or apples, and nuts

I hate cheese, except on pizza. Fresh goat cheese topped with hot pepper paste is ok.

No, feta is a specific kind of goat cheese, there are many different ones. The one I like does not have a specific name, we just call it fresh cheese. :(

fresh goat cheese is called chevre in most stores. Its quite good, though fairly strong in goat-milk flavor. It goes excellent with stuff like pesto, roasted bell pepper, and all kinds of brined, roasted, or cured vegetables.

feta is actually goat milk that has been homogenized, then turned into curds and pressed. There is less moisture (whey) in it as well, though the best stuff actually comes packaged in its own whey.

my pleasure, if you have a Trader Joe's where you live, they got the best Feta imo.

also, cooking with feta is great because it holds its shape fairl well, even when melted. If you toss it into pasta, it will stay in its crumbled form and get really soft. It does not get stringy

one of the best pasta dishes imois fresh diced tomatoes sauted in olive oil with a bit of onion and garlic, season with salt and pepper. Toss in some fresh basil, toss the cooked noodles in, then finally toss the feta crumbles in a couple minutes before serving.

Brie is awesome, especially when it's warm.

I gotta admit though, I'm a little surprised over the lack of love for goat cheese in this thread. Nothing can top that :D

Muenster! I've always loved it, except for that one time six years ago when I split a pound of it with three other friends...
