The same things you could expect in any other city, really. Quebec City is relatively large, quite old, and played a big role in Canadian history, so you can expect there will be some touristy things to do, along with the usual things that people would do to entertain themselves in any other urban centre in North America.
From my American understanding, you can go for a moose ride, ride on a fake moose (their version of a Marry-Go-Round), club beavers while riding a moose, become a moose riding lumberjack, or shoot a moose while riding a moose.
one tip, dont be ignorant about the french culture there. Ive been there and if you just walk into a store and start speaking english to the owner like he should know it, even if he does, he might refuse you service. there very uptight about preserving the french language and culture there.

I hear the states doesnt have poutine, so DEFINATLY get a poutine while your there, and i guess you could go snowboarding if you dont live near any snowy places.
Well, for one you can get out of Quebec as fast as possible. I hate the Quebec government because they're always flouting the not-withstanding clause to abolish human rights. First they were making it illegal to put outdoor signs on stores that were written in English (now it's legal, but the French wording has to be bigger). They're currently attempting to make it impossible to hold any position in government unless you believe in fairy-tales about all powerful beings.
