Good quick breakfast to make at home?

So tomrrow's my mom's birthday and I've decided to make her breakfast before she gets up so she can find it when she goes downstairs to leave for work.

She gets up at 5:30 to get ready and leaves at about 6:30. Generally, she only takes a Balance Bar or something, but I plan on going to bed early, setting my alarm for 5, and making her something. Coffee's easy, just turn on the machine, pour it into a cup, and add creamer.

However, as anyone who eats knows, coffee alone isn't a meal. What's a good quick thing to make, preferably something she can eat on-the-go since she'll be on the bus. I was thinking corned beef hash and eggs in a tupperware with a small thing of ketchup on the side (I plan to look up how to scramble eggs since I'm not exactly a chef). That seems a bit weird to have on the bus though. Maybe something like that beteween slices of toast? I was also thinking toast with peanut butter and jelly or something. We have bagels but I don't think she's a huge fan.

You all have any suggestions for me?

Don't worry about scrambling eggs, it's pretty easy. And that wouldn't be a bad idea, I like tossing in some ham or even bacon bits with cheese and it makes a nice omelet. Pretty good for on the go.

Toaster strudels are quick and easy to make. They may be inappropriate for the occasion though.

Just make sure you pay attention to the eggs and start flipping it up once the liquid starts to solidify, there's nothing worse then sticky over cooked eggs.

Yeah, that will be good. Maybe if you have bacon/sausage/ham slices or pieces that can easily fit between bread along with cheese and scrambled eggs it'll be pretty appetizing...at least i think it would be.
P.S. the first thing that came to mind after reading that was a hot pocket, but i know that is defintely not an option for this haha

If it has to be portable, make something like a breakfast sandwich but use two pancakes that are cut like bread... people seem to like those.

If your mother is on a healthy kick... get some fresh Granola and vanilla yogurt with blueberries or other fruit and mix it in a cup. Very tasty and healthy

That's not a bad idea at all. Plus, there's a much smaller chance that I'll screw it up! I think now it's between this and the egg sandwich. If I really can't decide, I'll flip a coin.

No spam, bacon and eggs? Actually the yogurt with blueberries sounds great. It's quick and easy. Maybe strawberries too.

You could also buy a quick breakfast if you're not worried about it being healthy.

One of two ideas, both involving omlettes. 1) do an omlette sandwich thing like the Burger King one, but try to involve at least ONE vegetable or something not meat or protein based. (Pic for and idea but replace that sesame bun junk with a bagel)  use a bagel instead of bread because bagels are sturdier than toast. 2) Another great idea would be to just set her up a nice plate with an omlette, some bacon/sausage/ham or a combination or all of em, then add some delicious toast. Maybe she will take the time to enjoy some of it, if she can't package it up so when she gets to work, she can enjoy it there, i'm sure they will give her time to quickly scarf down a breakfast her thoughtful child made for her birthday.

Oh you can go all out with bacon eggs, ham and hash with cheddar cheese and potatoes... but it's kinda filling:P

Seriously if you like granola, go to Whole Foods and grab some, it's fantastic, organic and very healthy! If you don't live in the states, look for fresh granola by itself

I love banana slices in my yogurt! I just had one of those new Yoplait yogurts.. vanilla flavor. And I forgot I bought bananas today so I ate it without them :x

Alrighty. I just flipped a coin. Heads, that was ham and egg sandwich. Thanks for the advice everyone! If need be, the parfait will be my backup.

On a less-related note, parfait is the French word for 'perfect'. Why is yogurt, fruit, and granola named that, aside from it being a perfect quick and tasty thing to eat.

Any domestically-challenged person can make eggs. Just take two eggs, break them into something, beat them until they're homogenous, spray a little nonstick spray or oil on a frying pan, turn your range up to medium high, and throw the eggs on and let them sit for a bit. As soon as the edges start to congeal, start flipping and turning the whole mess until you've got a consistency you like.

Yeah, and if you have a few extra minutes, throwing in a little cheese and ham in the eggs makes it even better. :)

For me, though, there's nothing quicker than a bowl of cereal or some Pop Tarts. :P
