The only sweetener I've found that doesn't taste like chewed-up aspirin is erythritol, and it's actually pretty good. It's about 90% as sweet as sugar, can be used as a direct substitute for the most part, and the only way I can tell a difference is that it has a slight "cooling" effect (like xylitol in mint gum), but it's mild. It also doesn't dissolve in cool liquids, but that's not a big deal if you can heat them up.
It's been a life saver, I tell you what, on those rare occasions I really need something sweet.
@JustPlainLucas: give Erythritol a try if you are actually looking for something. I had given up hope on a sweetener until then.
Interesting. Did a little research on it, and it says it has 70 percent sweetness of sugar, so I'll most likely detect it. Also a little concerned about how it's indigestible. Apparently, also has a melting point of 250 degrees F! I'm curious about the cooling effect you described. I might have to try it to see if I can detect it myself.
If you use it in moderation, it's not detectable, at least to me. So a spoonful in your coffee with some milk, for example. Or if you have a tomato sauce that's a little too tangy, put a bit in there.
The cooling effect is mild, I was only able to detect it by trying it straight. Like literally dabbing my finger in a bit and tasting it. I never experienced it when used in food.
As for the indigestible bit, not sure about that. It's never given me any problems. I did look up the warnings on, you have to eat pounds and pounds of it for there to be any issues. So unless you're making candy with it, I wouldn't be too concerned. And usually when they say "indigestible" they mean "passes through you unchanged", no "it sits in your stomach for 10 years".
I make a chia seed pudding, usually 5 cups liquid (water and coconut milk), 1/2 C of chia seeds, 1 C of erythritol, and 1/2 C cocoa powder and it's damn tasty. Previously I made this with stevia extract and it tasted like I was licking the inside of aspirin bottle. Now I can't tell the difference, only that it's slightly less sweet (and that is fine by me). Chia seeds have a ton of fiber, too, so I poop great eating this haha.
