How likely is our star to destroy and eat up our solar system? what are our scientists doing besides trying to figure out how to move rocks on mars, when we have real threats in the universe?

Our sun will eventually kill Earth when it begins to expand. Bottom line is you can't do much, I'd put more work in detecting asteroids and comets. In the near future we will be able to deal with these threats.

But everything else.. We have no control over. Gamma ray bursts, black holes, neutron stars, pulsars, etc etc your doomed.

Lol there's nothing we can do about it, it's enevitable, maybe we might figure out a way to stop it but I doubt it, the trick would be to stop the sun producing iron which brings the death of a star, we have millions of years till then
