While it does depend on the cut of meat, my default is Medium Rare...

Plus I want my food to be cooked and "tearable"... Not squishy, chewy, and maleable like rubber... If I wanted that I would eat rubber.

If your medium rare steak is getting rubbery, it means the cut of steak you are using is poor... you have to cook bad steak to make it edible... you do not do Filet Mingon well done..

I bought a whole beef tenderloin back in February. I got 7 steaks out of it along with a few other cuts. I grilled one of the filets a couple of weeks ago, I don't think it was on the fire for more than 5 minutes. Oh, god, nice and tender. mmmmmmmm

Hell yes... I feel bad for anyone that hasn't had a good cut of steak Medium rare... its what God eats...
