I'll say Late Night with Conan O' Brien. It's one of the few shows I still watch on TV these days.

Right now it's Dexter for me, but my fav of all time is Seinfeld.

I watch a lot of shows on TV but mostly because I want a conclusion to a series that used to be good rather than I enjoy it alot. I think one of the few TV shows on that still keeps its standards is Law & Order, all 3 of them.
Despite the obvious, expected answer, I'll go with Criminal Minds. It is the only one that has stayed very consistent since the beginning.
Speaking of Castle, I love that show, but I think its mostly due to Nathan Fillion's charm. The actual story lines are a bit weak, but the writers do a superb job of using Fillion's charm.Whilst I love House, Bones, Castle, Flashforward, Survivor, The Amazing Race, Supernatural, Fringe and Eleventh Hour, they cannot beat my two favourite Aussie shows ...
