This has been done to death...but i choose waffles. It has the little place holders for the syrup and butter.

pancakes, especially my pancakes. Well, I got the recipe off of epicurious.com but I made some tweaks.

basically, you mix the dry ingredients with the yolks, vanilla, and buttermilk.

then you whip the egg whites with sugar to make a stiff-peak mirangue.

Then folk the egg whites into the batter gently and dollop onto a fry pan with oil. Crispy, soft, and fluffy.

I dont like pancakes that are too bready or cakelike...they should be spongy and light. Then add some real natural syrup and some normandy butter!

I like waffles more, but they're usually so sweet i can only manage one. I could eat a whole mess of pancakes though.
