You need to watch the series off Symphonycometh's top 5. They make it to where most other animes are way too generic. Go with Fullmetal Alchemist (Not Brotherhood), Gankutsuou, Berserk, Gunslinger Girl, and Baccano!. The most generic one I could give you, but still good on a technical level is Samurai Champloo. I'd offer you other animes people are going to recommend you, but I find them pretty inferior after watching these.

Black Lagoon is pretty good

Darker then black is watchable

Full metal Panic,is all things considered a pretty good series, with some pretty funny characters, but im unsure if thats what youre looking for.

Really old (well the offshots are not) The Macross/Robotech series is pretty darn good.

Full metal Alchemist Brotherhood is pretty good.

Ghost in the shell: Stand alone complex 1 and 2 are well worth seeing.

For completely off the wall sick humor: Gintama (there is no overarching story tho, so Im not sure its something you are looking for)

And alot of people seemed to like Rahxephon, I did not however.

I would like a more detailed list of preferences, rather than the this generic sentence.

i like a good story with action in it. it's dosn't need to be 100% fights every corner.

Do you prefer subs or dubs? What level of maturity would you like in a show? Does animation take precedence over anything else? Or do you want something with a good art direction and character designs?

I'm going to recommend you watch Jyu-Oh-Sei, it's 11 episodes long. It's a great science fiction anime, with good animation, pleasant character designs. The first half has great pacing, and plotting. The story advances in such a smooth pace, and the characters are likeable (well the ones you're supposed to like). The second half isn't as good, the main character was seriously dumbed down. The animation quality also went down, but not significantly so. The ending left something to be desired, meaning there's no closure. But I still recommend it, I really liked it.

Outlaw Star, the first Macross (a great old school anime), and Canaan comes to mind. EDIT: also Trigun

Also Eden of the East is very good (however that doesn't really have that much action)

There are tons of amines for you to watch. We have amino acids, aromatic amines...

I see that you watched Naruto and Bleach already. If you liked those, then you should give One Piece a try. While the fighting is a bit weaker in One Piece, the plot and the characters are much more developed and engaging than they are in the other two shows.

The show starts off rather slow and it is a long anime (just like Naruto, DBZ, and Bleach), but I highly recommend it.

Neon Genesis Evangelion, Excel Saga, and Shin Chan are probably my favorite anime (not amine) series.

As for film, Princess Mononoke, Ghost in the Shell, and Akira are probably my top ones.

I've seen way too many anime to recommend all the ones that you should watch, but I'll start off with some must watch titles that any anime fan should have knowledge about. Neon Genesis Evangelion (watch this first!) Berserk Fullmetal Alchemist: Brotherhood (don't bother watching the original series, it's still good but Brotherhood is 100% on spot with the manga) Trigun These four series are series you NEED to watch before going into any anime discussion with serious fans of anime. Also might want to check out Code Geass, both seasons.

Brotherhood, who takes after the manga, is inferior to the original series, which branched away from the novel. I'm not even sure how it being from the original source justifies anything. The original series is the one that should be recommended. A lot less rushed and more emotional impacts.
