I've been on a health streak lately and have lost over 15kg. But, I do give myself one to two cheat meals each week.

(Weight loss has slowed down because on Monday I actually fainted 2 times during the early hours of the morning. Was completely responsive and was only out for a few seconds each time, but hurt my back in the process and still feel a little dizzy from time to time.) Apparently fell dead flat onto my back. I've been to the doctor's and everything looks good, so that's a relief. May have been partially sleep walking, who knows.

Tonight I'll be making Murgh Makhani (Butter chicken) with some Pakistani onion rice and naan bread. Will post a photo if I remember to.

Chile verde. Did it from scratch for the first time, surprisingly easy. Just cut some onion, tomatillos, chiles and roast them for a bit. Blend it when they're soft. Toss in a pot, add some cubed pork, and braise at 300 for a few hours.

I cook all manner if cuisine but I don't really do Mexican or South American that much, I think I might get into it a bit more.

Keep up the good work! If you cook your own food, it will help you lose weight simply by virtue of using wholesome ingredients. It doesn't even need to be all that "healthy" just needs to be wholesome and nutritious.

Been losing a bit of weight myself, just trying to keep it to 1500-2000 calories a day. Seems to do the trick. Took me ten years to realize that if calories in < calories out, you will lose weight. No gimmick needed.

Thanks for the kind words. I've always wanted to make Chile verde. I've been getting more into sophisticated Mexican cooking lately. Some of the Chipotle chilli powders have really taken the flavours to the next level. Especially when I make chilli gravy to go over enchiladas, seriously good stuff. Much better than adding regular tomato based sauce.

What's crazy is that I haven't been counting calories at all. I've basically just been eating breakfast, lunch, and dinner. Not much snacking in between and am only eating when I'm hungry. Not having overly fatty foods either. Lots of fibre. Bread with my meal at dinner. Only drinking water and one to two coffees in the morning. I'm only 23 though and cutting out sodas has probably done wonders.

For exercise I go for a brisk walk every morning for about 45 minutes to an hour. Always making sure to go up hills. (Usual have a set route.) On average I'd say I walk a little over 5km during that session, which isn't too bad. Did 10km once but felt sick after it, so.

I occasionally will go on the treadmill as well which is even more of a workout because you have a set speed and incline.

I'll list what have I been cooking for the past months since I'm avoiding Fast-Food joints and not because of Covid-19 but because they are all getting overpriced as hell.

Friday made chicken tikka masala with pilau rice.

Actually it was a Charlie Bigham so i just put it in the oven..!! Don't get much chicken for 2 so i had a boiled egg with my 3 mouthfuls of chicken a handful of rice and a piece of brown bread..!!

I cooked the same thing they did in the chef show on netflix volume 3 episode 2. They made meatball & pasta sauce / pasta. Everyone thought it was great.

Making the meatballs was actually pretty easy & they tasted 100 x better then store bought.

Jerk Chicken with homemade marinade (pretty simple to make, I like to load up on the scotch bonnet peppers). I eat pretty lean when cooking at home, I might make some heavier meals this fall though, shepherds pie is on the list.

I roasted chicken breasts which were marinated in barbecue sauce. Unfortunately I was too lazy to fry slices of potatoes so I just cooked some rice and made an aioli with lime on the side 😋

Sounds great.

It kind of amazes me when easy-to-cook food genuinely tastes like a "complete dish". My cooking is usually based on recipes with numerous ingredients where if you forget to use one ingredient at a specific time the entire dish will feel incomplete 😄

On another note, your post about enchiladas totally made me want to make that for this weekend! It was sooo long ago since last time. I think I'm gonna try to make vegetarian enchiladas! That's gonna be a new challenge for me 🤤

Not as good as homemade lentil , but for powder soup, pretty decent. Cheap, lasts a month easily. Can improve it as well by dropping in fresh ingredients.

It's usually sold in grocery stores, although convenience stores also sells it. Very popular in Canada, not sure if you can get it anywhere else?

Had a go of cooking Borscht, its a ukranian soup, consisting of beetroot, a lot of other veggies and sometimes meat.

The recipe I followed was from Hairy Bikers.
