In Star Wars, I'd want to be a Gen'Dai. I've only seen them as evil characters, though I would be a nice/neutral one. They're pretty cool from a biological standpoint in that they're essentially formless masses of worms. Culturally they're like lawful evil knights (blackguards?) in that they have a code of honor but because of this trauma they collectively experienced they skew evil.
Also they live forever, more or less, and can reform from really serious wounds.
Would be cool to be a force sensitive as well. I'd be a "grey jedi", not subscribing to either light or dark, but walking the fine line of balance between both.
As far as Star Trek goes, honestly I'm not super familiar with the characters, it'd be cool to be a scientist in the Federation. Human. Really seems like humankind has their shit together in the Star Trek universe, and it'd be a real pleasure to just work towards the greater good.

He's a brilliant character. Essentially a "real person" placed among idealized people.
I like that he was a guest character as well, so they never actually overused him. Used just perfectly.
Even Voyager, which is pretty weak compared to TNG used him fairly well. He overcomes his problems (although they jump back on holo-addiction) and helps them get home.
Partly what makes DS9 great as well, it places flawed people and Starfleets ideals in a less utopian, easy answer universe. Where the Captain gets to make a nice speech to wrap everything up.

Vulcans were mostly relegated to background characters after TOS, Andorians and Tellerites were ignored.

This. The only time I have seen an Andorian in TNG (and mind you I haven't seen every episode) was when Data had this daughter who could choose her form, and one of the options she had to choose from was an Andorian.
