More or less anything where the risk of death can't be minimized/diminished by non-human means, and isn't necessary to daily life.
So, yes, I drive a car. There's risk in there. But cars are also really safe for the most part, with things that don't rely on humans to take corrective action (airbags, seatbelts, crumple zones, etc.).
Compare to skydiving, which is also quite safe, but is reliant on people to correctly pack the parachutes. Or reliant on people to not pass out once they jump out and pull the cord. Which is why I won't skydive, because even though it is very safe, there are just too many opportunities for human error.
I don't really have any sort of formula for assessing this but the gist of it is if human error outweighs non-human error corrections, and the activity is recreational, I generally won't do it lol.

Sometime in the last few years I developed a fear of heights. I'm OK if there is a barrier, but if I'm going up a ladder for example and I get higher than 5 feet, I'm holding on for dear life lol.
I work at heights at my job occasionally and I was asked to go get some numbers off a motor that was basically on some scaffolding about five stories up. It was fairly safe but I had to climb up an extension ladder perched on a scaffold and it just did not feel safe, then I started shaking a bit, then the ladder rattled, and I "noped" the hell out of there.
