How can this film be so incredible if it is foreign language? Now, i'm not dissing it at all - I've never seen it - and it looks great. But isn't a lot of the drama lost if you're just reading subtitles? I've seen good subtitled films, but I never enjoy them as much as good English films. SO what about this film is so great? It's not dubbed or something, is it?

if you cannot enjoy a subtitled film, that is your fault, not the film's. Learn to read faster, I guess.
to answer your question, Pan's Labyrinth is good for a variety of reasons:
1. Excellent acting
2. A complex plot with excellent writing.
3. It is a visual feast, and not heavily reliant on CGI
4. Historical spin; it takes place in fascist Spain, and the complex plot runs parallel to the guerillas and the Spanish commander and the little girl...its just great.
5. Multiple genres...semi-historical, fantasy, suspense, a little bit of horror even.
