1.Bruce Lee's Enter The Dragon
2.Van Damne's Bloodsport
3.Jet Li's once Upon a Time in China II
Well?
Kung Pow! Enter the Fist, Ong-Bak: Muay Thai Warrior, Kung Fu Panda.
What? You didn't specify what kind of martial arts movies.

In that case, Kung Fu Hustle is definitely at the top of my list :)
Ong-Bak
And if I had to pick one Jackie Chan movie... Mr. Nice Guy.

KFH is a masterpeice.
It truly is. I went to see it with a friend, having no idea what I was getting into. Life changing moment :)
Honorable mention:
Don't watch much martial arts films, but these are the ones that come to mind:

I cried the first time I saw that scene haha.
Great movie. Love the ending, after the "metamorphosis".
As a movie, it's pretty good; has that perfect blend of slapstick, drama, romance, and emotional rollercoaster. Then the kung fu is in there and it takes it to the next level.
I like the koto scene, too.
The Raid: Redemption and Armor of God II: Operation Condor. The Raid is just brutal and well done. Operation Condor is more of Jackie Chan's signature fighting and stunt work, but also his funniest one.
Have a hard time picking third. Really liked Cobra Kai series and bringing back Karate Kid, so nostalgic; I did YT free trial to watch but now on Netflix. Sidekicks was a great knock-off I use to love but don't ever see it on TV anymore. I use to watch everything Jean Claude Van Damme or Steven Seagal did. The first Matrix fight scenes were cool up until the Wachowski sisters bored me to tears with all that slow motion in the following films. Never got big on names like Jet Li or Tony Jaa or any of those fanastical/magical Chinese martial arts films of last couple decades. Liked the Kill Bill movies though. Oh, 2010's 13 Assassin's probably deserves another watch.
Anyhow, one of my favorite fight scenes of last few years, impressed by the choreography and it being a long shot:

Will see KFH soon again, its timeless :)
Honorable mention:
You sir have seen buttload of kung fu movies.I'll catch up the highlighted movies i missed .
That's a tough question, narrowing it down to just 3. Yikes.
1. Enter the Dragon.
2. Ip Man
3. The Raid
Honourable mentions to Kung Fu Hustle, Wheels on Meals, Kiss of the Dragon, Unleashed, War, Fist of Legend, Fist Of Fury, Kung Fu Panda, Rumble in The Bronx, Nowhere to Run, Hard Target, Knock Off, Six Bullets, and The Transporter. If we're including swords, then I'll also give honourable mentions to Zatoichi, Seven Samurai, Blade, Crouching Tiger-Hidden Dragon and maybe Azumi.
I would also probably put Fist of Legend in a top list. It's my favorite old-school Jet Li kung fu film. Tai Chi Master was great as well. I'd definitely put it over any Segal films, even if they have Tommy Lee Jones being awesome.
I often have to explain to my uninitiated friends and family how their favorite US-released kung fu films are actually films in a long-running series.
