I have the choice of hooking up my xbox to my telly either by using HDMI or component. I chose component because I take the red and white sound connectors, bypass the telly and put them into my AMP, because my telly speakers sound crap! (and no the telly has no audio out)> Obviously I couldnt do this with HDMI, but I know HDMI has 1080p and component has 1080i but also 720p, I have tried both and cant tell the difference, can you really tell the difference between 1080p/i and 720p, if so when? Thanks

Component has 1080p too. There's not much difference between component and HDMI besides amount of wires.

First question to ask is wether your TV is 1080p or 720p? Next, most games for the XBox are not 1080p so if you are not concerned about upconverted movies, don't worry about it.

If your TV has a HDMI passthrough, you could use that.

Or if you AMP has HDMI ports, connect the Xbox to that, and set video to passthrough, that way, your using less cables, and its not as messy.

This is correct

They are upscaled to 1080p though, which does make a pretty big difference.

Upscaling can improve the perception of quality although it can also introduce various artifacts. If you have a 1080p tv (if not, this is mute) and you sit close enough to be able to discern 1080p resolution over 720p (See chart at http://s3.carltonbale.com/resolution_chart.html) then you should at least try it.

Forgot to mention that if you have a 1080p TV already, then it is already upconverting anything other than 1080p to 1080p as that would be the sets only native resolution.
