and in gaming, some games doesn't support dual GPU's, so 1 580 is better than 1 6970......so go for the 580 SLI

Neither. I would get 2 GTX 570's in 2-card SLI. IMO the $300 premium to step up to 2 GTX 580's isn't worth it at all.

Between the 2 choices, I would go for the 580's.

Oh okay, I see what you mean now. Lol sorry about that.

As for the topic at hand: 580 SLI, although I would follow hartsickdisciple's recommendation as well. The premium that the 580 has right now hardly justifies its performance, and a 570 can get close to or match 580 levels of performance with some overclocking at a drastically lower price. Anything above dual-card setups tend to be a sharp decrease in price/performance values due to the fact that most games do not scale very well, or at all, with more than two cards.

people are missing the key point...which is that 3 6970's are actually cheaper than 2 580gtx, so at the same price point I'd go for the 3X 6970. But instead of doing that I'd just get a 570 single gpu, or a 6970 single.

I would imagine the user would require a generator to run it.

Two 6970 or even 570s has plenty of kick already for 2560x resolution especially since your not going to go with the tri monitor setup.

Dual GTX 580's would be better. You always want to go for the fastest GPU before you start adding cards. Less heat, less noise and less driver problems the fewer cards that you have.
