I am getting a new sound card to upgrade my PC from the old onboard sound I currently have.

I mean I know its no harder than installing a video card which I have done, But my question is do I have to uninstall my current sound drivers. Like when installing a new vid card you uninstall the old video drivers put the card in then use the software given too you. Wasnt sure if its the same deal or if it dosn't matter.

Yes, uninstall the onboard sound drivers and disable it from the BIOS if you can, but there is a chance that you will get a few problems when installing the sound card, like for example the card won't work and things like that.
