Are you looking for strictly simulators, or any kind of games that have you pilot an aircraft? If the latter, the Descent games are great, though of course pretty old these days.
A smaller but more addicting game that I loved was Red Ace Squadron, based in WWII. There was also Ace Combat gold and if you're a Star Wars fan, Rogue Squadron rocked.
