I can barely find any, I don't want someone who's insanely popular that all they do is post god damn top 5 Call of Duty videos all day, I just want someone who knows what they're talking about and talks about new releases/gaming related stuff.

HAHAHAHA
Personally I hate watching Youtube commentators with huge ego and only post montages about how they got their 360 headshots, so here are some of my suggestions. All theses commentators are pretty mature and does great commentaries on a variety of games.
Total Biscuit- Used to do a web podcast about WoW but now he does many great first impressions on indie games and popular games. Also does video game industry discussions from questions he get from his email.
Pewdiepie- Does funny walkthroughs on horror games(Amnesia, Slinderman, Penumbra, FEAR, etc.)
Yogscast- Mainy does RPG/Minecraftvideos but sometimes they dive into other genres like FPS.
SideStrafe-Channel got popular due to DayZ but he does commentary on other FPS like Tribes Acsend, Battlefield 3, Blacklight Retribution, etc.
TheGUNNShop- Commentator used to be a heavy console Call of Duty player but throughout the years he got into PC gaming and tried other games like Minecraft, Skyrim, Amnesia, etc. He has another channel called YouAlwaysWin where he occasionally does videos with his other Youtube partner called meatwagon22(when paired up theses two are hilarious). He also talks about real world issues/news, gaming industry news.
meatwagon22-Commentates variety of games from Minecraft, L4D, Killing Floor, COD Zombies, etc.
PewDiePie is an obnoxious twit, his videos are tacky and his exaggerated reactions are terrible.Personally I hate watching Youtube commentators with huge ego and only post montages about how they got their 360 headshots, so here are some of my suggestions. I've seen all of Cr1tikal's videos, it's my sort of humor so naturally they click with me better. Also the only Flimsii video I've watched in its entirety is this: http://www.youtube.com/watch?v=vmwo6RjpH6k&hd=1 But yes, the point was it's easy to just click through related videos, featured channels, or just look for something specific for instance "Tribes Ascend montage" or "Tribes Ascend commentary", etc.I watch TB's WTF series but not much else of his content. Its good to find out about indie titles. I dont watch long plays or anything like that on youtube. I might as well play the game myself. Oh, I also watch UberHaxorNova sometimes, but not often. I think hes a genuinely funny guy and usually only plays PC games.
Synwyn
Pyropuncher
Seananners (who does quite a bit of PC gaming now)
Shaun0728, or Hutch, just started uploading after struggling with depression since May and has since posted some DayZ and a short CoD4 clip, I expect to see more PC from him as well.
Total Biscuit, maybe. Robbaz is pretty glorious. C_RuleRobbaz is incredible, but he doesn't really do gaming news, like you said Total Biscuit would be the best for that even though I really don't like him, he's too much of an elitist, "Look at this options menu, it doesn't even have a FOV option this is an absolute disgrace!"

This is true 90% of the time he says that. Every FPS should have a FOV slider on the PC version. PC gamers sit far closer to the screen than typical console gamers.
The only thing I watch UberHaxorNova play is happy wheels. The guy is genuinely funny imo but I just dont have the time to watch 8 videos a day that he uploads.I watch TB's WTF series but not much else of his content. Its good to find out about indie titles. I don't get why people are trying to start flame wars about what YouTubers are better than others. I mean, if you don't like watching somebody, you don't need to watch them.
Anyway, I can't give you my whole list of YouTubers I watch because it would be massive. I subscribe to people for specific games sometimes. One group that I have always watched is the Creatures. They do some console stuff, but they play on PC for the most part.
And that exempts anything from criticism? Hell no, stuff like PewDiePie deserves all the criticism it gets. Another one for the suggestion pile, retsupuraeI don't get why people are trying to start flame wars about what YouTubers are better than others. indeedLevelCapGaming is my current personal favorite. He's very good at the games he plays, but instead of posting montages and killstreaks all the time, he does reviews of the gear, takes comment suggestions on what to use for videos, and gives lots of good tips.
Some of his smaller tips have saved my bacon more than once, and while his playstyle is different from imine (he's an aggressive killer while I'm more of a supportive force multiplier), he knows a lot about stats and what goes best with what for optimal weapon loadouts in prime situations.
He's mostly a Battlefield 3 player, but he has Planetside 2 and Call of Duty: Black Ops II tips as well. He's also the leader of the Vanu Republic in Planetside 2 apparently.
I regularly watch:
Tales Of Lumin - he does gaming news, looks at new games, and does playthroughs - http://www.youtube.com/user/talesoflumin
TotalBiscuit - gaming news, WTF is, etc. - http://www.youtube.com/user/TotalHalibut
Jesse Cox - mostly playthroughs, but has been highlighting Steam Greenlight games - http://www.youtube.com/user/OMFGcata
Press Heart To Continue - quick gaming news - http://www.youtube.com/user/PressHeartToContinue
Angry Joe - mostly for his game reviews - http://www.youtube.com/user/AngryJoeShow
I watch some others, but not regularly.
