Lots of people rated oblivion. I'd rate morrowind over that personally.
Also, Fallout / Fallout 2. if you're prepared to go back in time.
And if you can track them down, FF7, FF8, Chrono trigger and Chrono Cross. PC versions exist.

Deus Ex, Deus ex 2 etc.
I hear gothic 3 is pretty good, jsut demanding system wise

Also, may I seriously suggest a wicked game in beta called Mount & Blade. Google it. It's pretty good if you give it some patience, and don't get off your horse. Graphics are reasonable too, for an indie game.
Also, Privateer Remake, technically not an RPG, but you have to build up your ship and whatnot so maybe.

Overlord is great - very toungue in cheek, but that's half the appeal. Besides, who wouldn't want a horde of minions?
