Hitman
The Witcher
On the PC...
Morrowind
Oblivion
Lord of the Rings Online
Neverwinter Nights 2
Of non-PC games, though...
Kingdom Hearts series
Final Fantasy
Final Fantasy VII
Final Fantasy X
Megaman series
Castlevania series
Not counting main menu music, since there are a handful of games with great main menu music but uninteresting music during gameplay:
Battlefield 2142 (different music before each map)
Bio Menace
Blake Stone
Commander Keen 4-6
Cosmo's Cosmic Adventure
Crysis
Dark Forces (it's just various Star Wars music, but it sounds a lot different in old adlib sound effects)
Dawn of War
Descent
Descent 2
Duke Nukem 2
Jazz Jackrabbit
Major Stryker
Mega Man X
No One Lives Forever
No One Lives Forever 2
Oblivion
Outlaws
Red Alert 2 & Yuri's Revenge
Red Faction
Rollercoaster Tycoon merry-go-round music
Starcraft Protoss music (Zerg is meh, Terran is annoying)
System Shock
Terminal Velocity
Tyrian 2000
Uru
Warcraft 3
Xargon
I cant believe no one has mentioned COD4.. Thats bad as i feel the song being played while credits are rolling is just AWESOME.. k_ozz
god man im gonna have to disagree. i listed COD4 in my list but that stupid rap song was the worst thing in the whole game. That singleplayer had such an epic hollywood feel that i wanted some cool orchestral closer to the level of in game music. the rock song in the bonus mission was awesome though.

My faves for PC -- WoW, Starcraft, Civ4, Quake, System Shock 2
Faves otherwise -- Final Fantasy 6 through 9, God of War 1&2, Mega Man 2, Ikaruga, Gitaroo-Man, Zelda OoT, Super Mario Galaxy, Castlevania: Symphony of the Night, Castlevania 1-3, Kingdom Hearts, Tales of Symphonia, Viva Pinata, Grand Theft Auto: San Andreas, KOTOR (played it on xbox), Shadow of the Colossus, Persona 3, Batman (NES), Bayou Billy (hated the game but cool music), Blaster Master, God Hand, I'm sure there's a bunch more that I can't think of at the moment.
Morrowind, Castlevania, Rise of Nations, Stronghold, Starcraft, Gothic series
It's hard to believe some people mention Crysis, Far Cry, Splinter Cell, etc. Those games had music so unmemorable that I honestly wouldn't be able to tell you if any of those games even had a soundtrack.
Halo, FFVII and some Half Life 1 and 2 songs, especially 'Something secret steers us.'
Oh, and the TF2 menu music. The good one. The music file that has '1' in it.
No one has mentioned Portal Yet?:P anyways
Half-Life series
Halo series
Mario series
Zelda series
FF: series
TF2 music
Splinter Cell series
Mafia
Deus Ex
Hitman
Those are my faves
Some of my favourite game music includes...
Outcast - they used a proper orchestra and the soundtrack throughout was excellent (including the humorous song at the end)
Rune - I bought the music CD in addition to the game because I liked it so much. :)
Quake 2 - great metal tracks that I used to listen to outside of the game.
Quake 1 - for when I'm in a strange mood.
Deus Ex - great electronic rock
Unreal - more great electronic rock
Unreal Tournament - even more...
Oblivion - a nice mix of atmospheric music and I like the catchy theme
Rainbow Six Vegas - for some reason the music struck a chord with me which was a pleasant surprise
Deus Ex Invisible War - actually had a decent soundtrack
Brothers In Arms: Road To Hill 30 - had a nice orchestral soundtrack
Malice for Quake - the best thing about it was the music lol
Medal Of Honor: Allied Assault - great orchestral soundtrack
Age Of Empires III - quite like the mix of different music (and the track names are off-the-wall). ;)
Vampire Masquerade: Bloodlines - nice mix of good music (includes some licenced tracks)
Thief: Deadly Shadows - nice atmospheric (and creepy) music.
