Some of my favorite early FPS game moments:
Turning your friend into a chicken in Heretic.
Pressing space in front of the various dancers in Duke Nukem 3D.
The first time seeing "ludicrous gibs" in Rise of the Triad.
The castle fly-by in Unreal - realizing that was actually in-game.
The whole train/intro sequence in Half-Life.

Police quest 3 & Phantasmagoria were two of my favorites growing up.
