I suppose if you can't fly a multi-million dollar jet in real life, virtual flight in games like MS Flight Simulator is the next best thing. Check out Lock On: Modern air Combat and IL-Sturmovik, those are classics and are pretty cheap if you look in the right place. I do miss the Janes' series, USAF, F-15 and Fighters Anthology, those were classics! Then again, I'll never find a better fighter sim than Strike Commander, an oldie but a goodie!
As for downloading, you can buy IL-Sturmovik right here on gamespot and the Gametap service has Lock-on and IL-Sturmovik on their service for a monthly/yearly fee. I know you can find these in stores for cheap though.

With you 100%. Strike Commander was the best flight experience even to this day, if only they'd do a modern remake. Because having that story made the game so much more immersive than the generic "shoot this, bomb that, and take some faceless wingmen along with you".
