What kind of cooling would I need for a rig like this:

Q6600 (G0) over clocked to about 3.0Ghz - 3.2Ghz

2 8800gts 512mb in SLI (probably overclocked)

750i FTW

4gb DDR2 800mhz (probably overclocked)

2x 500gb HDD

850w

NZXT zero case

Also I live in Australia so it can get pretty hot during the summer, especially when the air con carks it.

So If I replace the stock fans and get a heatsink for the CPU that will be enough? What about the Video Cards? Will they overheat?

Only if you overclock by a reasonable amount.

If you aren't having problems with heat right now (I don't see how you could be), but atleast get a cooler for the CPU such as an Arctic Freezer Pro 7 or better. You can probably overclock the GPU but if you really want them to go far and temp is an issue get aftermarket coolers for both.
