I'll be running Creative Suite 2, and really old games, so if I don't need the 4M, then I would rather get a 2M CPU for $40 cheaper.

2MB isn't $40 cheaper - the E6X20 chips are at most $1 more than their E6X00 counterparts - often cheaper, at this point. Unless you're talking about downgrading to an E4k chip, in which case you might as well go all the way down to the E4300.

Sorry for my ignorance. I guess this is my question:

Intel Core 2 Duo E6320 Conroe 1.86GHz 4M shared L2 Cache LGA 775 Processor - Retail$165.50

Intel Core 2 Duo E4300 Allendale 1.8GHz LGA 775 Processor Model BX80557E4300 - Retail $114

Would I see a noticeable difference between these cards if I was running Creative Suite 2 with 2 GB RAM?

No, you would not see a noticeable difference. If you did, it would be very slight, and hardly worth bothering about.
