Does it matter which version of WoW you buy ?

I swear that I downloaded the demo of Wow Cataclysm last night, and I picked up the first one today, and it's the same game... ?

Maybe the demo was demo of the first one or something...

But if I was to buy The Burning Crusade, or The Wrath King, would it be any different, or does it just automatically update to the latest version of the game, no matter what version you buy ?

I believe it updates to the latest version of the "WORLD" to be able to play. Saying that, if you just have WoW Original Game, you don't get the bonus things that come with the different expansions (new classes, new level cap, new professions, etc)

You need all xpaks to be able to play all the content. At the very minimum you need the Original game.

You can't just buy Cata and have them all, Cata by itself is useless, you need all the xpacs up to that to be able to play. or u could buy just the orginal and have access to the 1-60 content excluding the xpac races.

the expansions do not change any of the game content from levels 1-60, unless you roll a race that is not in the original. there are other things too but i can't recall them atm. basically, it IS the same game but there is less content without the expansions. they are not different games.

You MUST have at least the original WOW to play at all. The original includes 1-60. Burning Crusade is required if you want to play a Blood Elf or Draenei, and allows levels 60-70. Wrath of the Lich King unlocks the Death Knight and levels 70-80. Cataclysm unlocks Worgen / Goblins and 80-85.

Unfortunately, you must have all the expansions if you want to play to 85. You can't skip one :( You can always start with the original, play to 60, then buy BC at that point. Stores very often will have the Battlechest (Original + BC) on sale for $20-30.

You will always get class changes, changes to the game (like the revamped 1-60 zones), etc. for free though.

The game is the same for everyone. Every player plays the same build of the game. Expansions just unlock features such as professions, new races, new classes, flying mounts, levelling to higher levels, more battlegrounds, new items, dungeons and exploring more areas including entire continents.

So I have the original WoW... If I brought all the other expansion packs, the graphics wouldn't change at all ?

You need to get them in this order. Original WoW, Burning Crusade, Lich King, Cata. If you break the order, the games won't work.
