I sometimes play FSX and X-Plane 9 with dual monitors. But, I only do so if I'm flying aircraft with side by side sitting. Single seat aircraft and FPS games would look weird with just two monitors. You'll need three monitors for those situations.

supreme commander 1 & 2.. in the event you want a proper multimonitor game just get an hd 5000 or 6000 series gpu and eyefinity it up :P then go play most any game on screens.

wouldn't triple monitor be better so there's actual a middle ground screen instead of having a gap in the middle?
supreme commander uses dual monitor.
