I took a look at some reviews on Amazon too, and I have to say the Neverwinter Nights seems to beat them alit is hard to choose!
My understanding right now is that Baldur is considered one of the best ever, NWN follows-up very well and according to some "takes where Baldur II left", and ToEE may even be the closest to D&D but has a lot of bugs and is slower because of a different combat system..
I have one other question: let say I pick these 3 among the games which were quoted in this thread. Is there one that would maybe be more appropriate to start with? If I like the concept, I may end up playing all 3 eventually..!

In my opinion, I think you may be best starting with NWN 1 as the graphics aren't as dated as Baldur's Gate II. However, BGII is a nice looking game for it's time. I liked NWN2 better than the first one, but the first may better fit the style you describe. I mean, they are similar, but NWN2 is a bit different and the graphic engine is based of Knights of the Old Republic (Star Wars). The one big difference between NWN2 and NWN1 is that you have more playable characters in the second, which may effect your decision. NWN1 has a lot of gameplay and several expansions. NWN2 expansion is going to be released shortly.
Another thing to consider is how up-to-date your computer system and graphics card. You'll have no problem with Baldur's and NWN1, but NWN2 will require current technology.
As for Baldur Gate II, it's on the Gamespot greatest games list. A very epic game with great story and dialogue and a couple of good expansion that will give you 100s of hours of gameplay. Again, I think NWN1 is a good place to start. If you like it, you can pick up NWN2 later. I'd go ahead a pick up BGII now since you can get the combo boxes for very cheap and maybe play it casually alongside the others.
Ultimately, I think you will like all these games. I would avoid the Temple game for now, even though I heard the patches fixed it up quite a bit, but there's probably still enough bugs to frustrate a newbie.
