From the most recent ones I would recommend those:

Anno 1701(not only it's fun as hell and has tons of depth, but it's also simply gorgeus game)

Caesar IV

Port Royale 2(gameplay-wise it's the best of 3, but it's 2D and preety hardcore, so it might be better to start from Anno)

Now those three should be great introduction to the genre.My recommendation is to start from Anno and then move to Caesar IV or Port Royale 2. after those there are tons of great econimical games to play, so you won't get bored ( I could easily name at least 20 amazing games from this genre)

Capitalism II would be my recommendation. Quite realistic (well, for a pc game :)) simulation of manufacturing, buying, selling a vast range of products, including marketing of the product itself.

Keeps you much more on your toes than the typical game in this genre where you usually grow filthy rich in the mid-game and get bugged down with either micromanagement to get some minor improvements, or where it doesn't matter anymore what you'll be doing since money is accumulating faster than you can spend it.
Quite good tutorial as well, taking you one step further at a time and fun from the start.
