What sort are you interested in, modern or WWII? If world war 2 get Il-2 Sturmovik 1946, if modern there havent really been any good ones released lately, but you could try Lock On: Modern Air Combat.

Rise of Flight (formerly Knights of the Skies) is looking very nice. Couple of vids here.

DCS Black Shark heli simulator looks amazing, but I know my machine will never be able to run the beast.

Oleg MAddox's team, creators of IL-2, are putting the final touches on Battle of Britain: Storm of War. Should be good. They're not releasing too much info though.

Over Flanders Fields Phase 3should be out any day. Looks great!

In case you're looking for an arcade game rather than a sim, Blazing Angels 2 is lots of fun, even if you're stuck with just keybard and mouse like me.

Forgot to mention, Third Wire recently released Wings Over Israel. Supposedly a decent little budget game if early modern jets are your thing. Can only fly as the Israelis unless you install some mods though.

Also forgot to mention, that A2A Simulations (formerly Shockwave!), the makers of Battle of Britain II: Wings of Victory) are working on a new game about the Flying Tigers. If it uses the same AI as BoB, it should be a brilliant single player experience.

I was always a fan of the planes in the Battlefield series, so I guess I'm looking for something along that feel - more of a sim

Battlefield is many things, but a sim isn't one of them. If that's the kind of thing you're looking for, you'd likely do better to avoid the titles I mentioned and try something along the lines of what Master Yevon mentioned.

You can't go wrong if Sturmovik is in the title.
