load time on games should be faster and moving files around on the drive should be faster.

Theres a difference in speed, even if its not exactly huge. The bigger changes are related to cabling and drive settings (there are none on SATA, its kind of like everything is in Cable select).

One thing I noticed with my DVD drives is ide drives run in udma2, but sata drives run in udma5.

faster cables?

Faster transfer rates (though not dramatically so). The cabling itself is round rather than flat so it ends up restricting air flow less and dissipating heat better. Also SATA cables are only for one device instead of a potential two like PATA has.
