Should I pony up an extra 80-100 bucks for the 640mb version of the 8800gts, or will I be fine with the 320mb version?

E6600+ 2 GB RAM 1680 x 1050

Up to you. That extra 320MB's of VRAM might come in handy in the future, so I would.

For that resolution I think you will appreciate the 640mb, go for it and enjoy.
