What's the difference between EVGA GTX 260 and ATI Radeon HD 4650 1gb pci-express x16?

Was wondering which I should pick.

I'm thinking of getting 2 4650s and running them in crossfire (1GB per card), my motherboard is an Asus P6T Intel X58 Chipset.

The Nvidia GeForce GTX 260 is comparable to the ATI Radeon HD 4870. I would go with a more powerful card over two lesser powerful ones. Also in CrossfireX, you don't add up the VRAM, if both your cards have 1GB of VRAM, you have 1GB of VRAM total, both cards have to have the same data in memory.

The 4870 is GDDR5, is my motherboard compatible?

The memory type on a video card does not have to be compatible with your board. The memory controller on the HD 4870 handles that memory so it'll work with any board.

You can also use SLI, thats if the P6T supports it. Its the same thing as crossfire except with a different name, because its Nvidia.
