I would take the two 8500s out and replace them with a stronger card (possibly an 8800 gtx). Having 2 of those cards doesn't automatically make it a better setup. Also I would read up on the power requirements for the Sli configuration, that 350 watt power supply might not cut it. Other than that it looks pretty solid, although a larger monitor with higher resolutions would definitely enhance your gaming experience.
Just my 2 cents, overall that rig seems fairly solid.
1. where are you buying these parts because your total seems a little high

It probably seems expensive because he's including everything in the total cost, even extras.
Get a better powersupply, atleast 700W to be safe especially since your runing a dual core CPU and 2x D3D graphics cards. IMO I would replace those 2 8500GT's with a single 8800GTX. Other than the power supply you could max out Crysis in D3DX mode add are set for 3-5 years.

5. MONITOR: LCD Viewsonic 20" Widescreen Q20wb TFT LCD Monitor 1680x1050 w/fast 5ms video response

yeah, looks good with those changes, but two more things;
1. Make sure the case you're getting has good cooling, those 8800s can get pretty hot
2. Personally, I would stretch the budget to a 22" monitor, and maybe cut the 8800gtx down to an 8800gts 640mb if that pushes you over budget too much. You will really notice the difference, especially with an 8800 graphics card, it would be overkill IMO for anything smaller than 22"...
