mrbojangles, you absolutely have to buy Prince of Persia Sands of Time. It will satisfy your desire to cut things to a degree, and it's also an amazing, amazing game. You really have to try it! Playing it is an absolute pleasure from start to finish - probably needs a pad, though.
For a full blown cut 'em up, try Blade of Darkness. It's probably got the best melee combat I've ever seen in a game

I use a PlayStation 2 pad with a USB adaptor. As far as I'm concerned, it's the best pad out there for games best played with a pad. Unlike the 360 pad, It doesn't work well in games where you need independent control of character and camera at the same time, like FPS games, but you aren't going to be playing those with a pad anyyway.
I don't really know anything about PC pads, but people seem to like the 360 pad.
I just started Lord of the Rings:Return of the King last night and it seems pretty good. This is the first action game I've played as well,other than Sands of Time(which was excellent).
I went ahead and bought a logitech gamepad yesterday for Return of the King,but it actually plays fairly well just with the key/mouse. Its got some pretty nice moves/combo that are fun.

Well, when things like this are a regular occurrence, it's kind of hard to think very highly of the combat. I think he killed 11 guys there, and they mostly just stood around watching him while shouting This will not be difficult or, for some reason Are you trying to lose me? Pretty pathetic AI means pretty pathetic combat.

Yeah, I've seen that video before. That seriously looks so incredibly unengaging. It actually hurts just to watch it (I'm not kidding, I feel what can only be described as mental pain while watching the video).

Diablo II isn't an action game? Are you kidding me? Sure it's got RPG elements, but it remains one of the all time great action hack and slash games.
If Diablo is a hack and Slash game then so is Sacred, Titan Quest, Dungeon Seige 1 and 2, and Silverfall.
I agree Dark Messiah also falls in this genre.. but as for Bloodrayne... it cannot be compared you better off looking at Soul Reaver or the like.
Some old hack and slash games would be Witchaven 1 and 2 and of course Deathtrap Dungeon
